Glazed Grilled Pork Tenderloins

 

With the weather warming up, the days getting longer and the worst of the pollen is over with, we like to spend our evenings in the back yard. The mosquitoes are there but not swarming us, a few citronella candles and we are good to go. This entire meal is cooked on the Weber so clean up is a breeze. I buy my pork tenderloins at Costco’s. They are larger than the ones I can purchase at the grocery stores. These tenderloins come two to a cryovac and the pack is two cryovacs. They freeze well so they do not have be cooked all at once. This recipe requires no marinating and is on the table in 30 minutes.

Glazed Pork Tenderloins with Grilled Corn & Zucchini

2 pork tenderloins (about 3 lbs.)

Olive oil

Garlic salt

Freshly ground black pepper

Hot Mexican chili powder

¾ c cherry preserves

6 ears of corn, shucked

6 zucchini, sliced in half lengthwise

Light a charcoal grill. When the coals are a light grey color, push the coals to one side. Remove the pork tenderloins from the cryovac, rinse and pat dry. Using your hands wipe the entire surfaces of the pork tenderloin with olive oil until completely covered. Oil the corn and the zucchini as well. Sprinkle the garlic salt, pepper and chili powder over the entire tenderloin until the surface area is completely covered.  Salt and pepper the corn and the zucchini. Place the tenderloins over the hot coal side of the grill. Grill for 5 minutes on each side to create a bark like texture and move to the side of the grill without the coals and cover the grill. Cook for about 5 minutes on each side. Meanwhile run a knife through the cherry preserves mincing the whole cherries so that they will stick to the tenderloins. Paint the tenderloins with the cherry preserves and cook 5 minutes turn and repeat. When the internal temperature reads 145 degrees they are ready to be pulled off the grill. Tent with foil and let them rest for 10 minutes. After the pork tenderloins have been moved to the side of the grill with no coals, add the corn and the zucchini to the grill over the coals. Turn both the cobs and the zucchini halves after 5 minutes. Pull when char marks the entire surfaces of each. Slice the tenderloins into 2 inch slices. Serve with the corn and the zucchini.
