Plum Spice Cake

This cake is good for more than just dessert.

Thinking back on Grandma’s kitchen, there are few memories quite so nice as sitting down at her sunlit table and enjoying the sweets she seemed to whip up with such ease. The sharing of a meal or a cup of coffee is about so much more than the food, it’s the fellowship and Grandma seemed to understand that better than anybody.

Southern cooking is a legacy I believe in, and I love sharing that legacy, one recipe at a time.

Few things in life compare to walking into a cozy kitchen and being greeted with the heady scent of plum spice cake baking in the oven. Contrary to popular belief, it is in fact possible to bake this cake from scratch, not all good things come in a box.

Plum Spice Cake carries a uniquely complex flavor and consistency that lends itself well to several different occasions. It can be enjoyed plain with coffee in the morning, or drizzled with a sweet glaze and served as dessert.  

Ingredients:

1 cup oil

4 eggs

2 teaspoons cinnamon

2 cups sugar

3 teaspoons cloves

2 cups self rising flour

4 containers plum baby food or 2 cups of mashed plums (Prunes can be substituted for plums)

¼ teaspoon salt

1 cup chopped pecans (optional)

Directions:

-Mix sugar and oil, add eggs and mix thoroughly

- Sift flour, cinnamon, salt and cloves together, add slowly to oil, sugar and eggs

- Mix well

- Add plum baby food and nuts

- Pour into well greased and floured bunt pan

-Bake at 350 degrees for 55 minutes

- Cool in pan for 20 minutes
